SALSA 2009

14 cups tomatoes – peeled, drained, and chopped
1 29 oz can Hunts tomato sauce
4 cups chopped onions (red and yellow)
3 cups chopped peppers (variety of my hottest exotic)
1 cup white 5% vinegar
½ cup lemon juice
½ cup lime juice
¼ cup light brown sugar
2 TBL salt
1 TBL mexican oregano
1 TBL cumin
3 TBL minced garlic
1 TBL coarse ground black pepper
3 TBL coarse ground mix of my smoked & dehydrated exotic hot peppers.

Cook 1 hour or till thickened. Put in jars and seal.

that recipe I do, it is adapted from my wife's aunt's. I make it very hot and very smokey.
I do also have a couple recipes for fresh salsa.

Smoked Salsa Recipe

4 large tomatoes peeled, diced and drained.
1 large sweet onion diced
Juice and pulp from 1 lime
1 tablespoon white vinegar
1 tablespoon olive oil
1 teaspoon coarse (sea salt or canning salt) salt
1 teaspoon crushed garlic
2 to 4 Chipotle' peppers ground in a blender

stir all these ingredients together and enjoy

BTW a chipotle' pepper is a smoked dried jalapeno pepper and although I have seen them canned I use only the dried ones in my salsa

Pico De Gallo
Ingredients
* 6 medium Tomatoes diced
* 1 medium Onion diced
* 1/4 cup fresh Cilantro chopped.
* 2 to 4 Fresh serrano or jalapeño seeded and diced
* Juice and pulp from 1 lime
* 1 teaspoon Minced garlic
* Salt to taste
Put all ingredients in a bowl, mix well. Let set a few minutes.
